Crunchy Banana Stem Salad Recipe

Ingredients:
– 1 cup banana stem, finely chopped
– 1 cucumber, finely chopped
– 1 small onion, finely chopped
– 1 small capsicum (bell pepper), finely chopped
– 2 tablespoons fresh coriander leaves, chopped
– 1 teaspoon salt (adjust to taste)
– 1/2 teaspoon pepper powder (adjust to taste)
– 1/2 teaspoon sugar
– A few drops of lemon juice (optional)

Instructions:

1. Prepare the Stem:
– Remove the outer fibrous layers of the stem until you reach the tender inner core.
– Cut the stem into thin slices and then chop finely.
– Soak the chopped stem in water with a little lemon juice or buttermilk to prevent discoloration. Drain before using.

2. Combine the Vegetables:
– In a large mixing bowl, add the chopped stem, cucumber, onion, and capsicum.

3. Add Seasonings:
– Sprinkle salt, pepper powder, and sugar over the vegetables.
– Mix well to ensure the seasonings are evenly distributed.

4. Add Fresh Herbs:
– Add the chopped coriander leaves to the bowl and mix again.

5. Optional Lemon Juice:
– If using lemon juice, add a few drops and mix thoroughly.

6. Serve:
– Serve the salad immediately to retain the crunchiness of the banana stem and vegetables.
