Vegetarian Healthy Hand-Pulled Noodles

A recipe for your vegetarian healthy hand-pulled noodles:

Ingredients:
– 2 cups whole wheat flour
– 1 teaspoon salt
– 1 cup diced carrot
– 1 cup diced radish
– 1 cup diced chow chow (optional)
– 4 cloves garlic, minced
– 4 green onions, thinly sliced
– 2 tablespoons soy sauce (low sodium if preferred)
– 1 tablespoon vinegar (rice vinegar or apple cider vinegar)
– 1 tablespoon sesame oil
– 1 tablespoon palm sugar (or brown sugar)
– 1 tablespoon sesame seeds (for garnish)
– Water for boiling noodles
– Gingelly oil for cooking

Instructions:

1. In a large mixing bowl, combine whole wheat flour and salt. Gradually add water while kneading until a smooth dough forms. Cover and let it rest for 30 minutes.

2. After the dough has rested, divide it into small portions. Take one portion and roll it out into a thin roti-like shape on a floured surface.

3. Using a knife or pizza cutter, slice the rolled-out dough into 1-inch strips.

4. Take each strip and slowly use hand-pulling method to stretch it into slt thin noodles. Repeat with all the strips. Or use the strip by itself.

5. Bring a large pot of water to a boil. Add the hand-pulled noodles and cook for 2-3 minutes, or until they float to the surface.

6. While the noodles are cooking, prepare the vegetables. Blanch the diced carrot, radish, and chow chow in the same boiling water for about 2 minutes, or until tender. Drain and set aside.

7. In a skillet or wok, heat some gingelly oil over medium heat. Add minced garlic and sliced green onions, and sauté until fragrant.

8. Add the cooked noodles and blanched vegetables to the skillet. Pour in soy sauce, vinegar, sesame oil, and palm sugar. Toss everything together until well combined and heated through.

9. Serve the healthy hand-pulled noodles hot, garnished with sesame seeds for extra flavor and texture. Enjoy your nutritious and delicious homemade noodles!
